Elden Ring is the result of regressive evolution. People expect it to be super hard but fair, but the Souls formula only has a limited skill ceiling if you can avoid everything with i-frame rolls. After so many games in the formula they're running out of ways to make fights harder which is why 90% of the boss fights in ER have some combination of delay attacks with roll punishes, combo extensions meant to punish attacking and "extremely long wild flailing attack".

They also leaned even harder into cheese mechanics too though (the AI tends to fall apart against multiple enemies on the player side and everyone has summons, also all attack magic) so it ends up in this awkward spot where some enemies are just extremely unpleasant to fight 'fairly' but cheesing them is easy and ruins the challenge.
