The trick is to flee into the nearby dungeon.
It's a low level area, so the Mouse Bandits HQ isn't particularly tough.
But part of the puzzle requires you to match cheeses with their correct names in order to get further into the dungeon.
Get past it and the Minotaur will have a hard time beating the puzzle to chase you.
