I think you are mixing up two kinds of people, those who want a romantic relationshi with one of the girls, and are serious about it, more so do it as they acknowledge the many flaws of the human body and mind, and they can either embrace it, or strive for the ideal of the person without these negatives. The serious waifuists choose the later, they go after anime girls as they often embody the ideal that their archetype depicts, not a character completly without flaws, but one whose flaws compliment them, build up to their character, and aren't as detrimental, wihile their charm also can be represented to a degree that would be very hard to exist within a real human mind
And for those who aren't romantically involved, then it's often more so a case of the girls having flashy designs, and the fetishisation of a good amount of the girls, so this effect is most often found in those who don't engage with touhou as much, but rather the community built around touhou
