Here's a good example of a brewery that makes both ends of the spectrum (sweet and dry) for Nigorizake.

The red bottle was almost candy-sweet, and the blue one was pretty bitter. I made the mistake of coating my mouth with the red one first, lol.

Both are Junmai, with no additives used to alter the flavor of the rice in any way. It's pure technique.
This is why in sake brewing, there's a saying that goes, in order of importance, "First is Koji, Second is moto, Third is Shikomi (the act of brewing)"
