I've ordered some stuff from Den's for the first time, thought I would try their houji-varieties. This houji kukicha is really good! The flavor isn't as nuanced as a nice first flush houjicha but it's nice none the less. It has that fruity typical flavor but very sweet, and it's cheap as HELL to boot. It goes pretty fast tho on account of you use more per cup.

A great wintertime tea.

There is no right way to drink tea. There's a million different ways to prep it. In ancient china they originally mixed it with vegetables and ate it as food.

The flavor doesn't degrade as fast as coffee so you don't need to be scarfing it down or anything.

I once bought a cup of coffee at a place where you poured the coffee yourself, I was distracted by something and wound up pouring myself half a cup of flavored hazelnut coffee before I noticed. I tried to water it down with regular coffee and cream, but it still tasted like licorice jellybeans.

The taste is much better in my opinion. The flavor is better. I've been cold brewing my tea for quite a while and having hot brewed tea i can really tell the difference. Cold to me tastes more flavorful while hot almost tastes like if the tea was cooked. Honestly the amount of caffiene or theanine depends on how long you steep the tea, it can come out just about the same if steeped long enough. Cold brewing takes time but its my method of choice as i get the flavor of the tea as it smells and not the flavor of cooked leaf.

Just a plain old cooking pot. I heat approximately 7dl of water at a time. From 100C, it drops to approximately 80C when I pour it into my cold cast iron teapot. If I heat the teapot beforehand, it drops to about 90C. Pouring 1dl of cold water from the tap to the cooking pot drops the temperature from 100C to approximately 70C. Furthermore, pouring that to the heated teapot drops the temperature a bit.

Coffee is pretty neat. It's not cute and girly like tea, and you can't pretend to be an ojousama while drinking it, but it's still really rewarding to explore.

It might not seem that complex, because unlike with tea leaves, there's not different types of coffee beans. It all comes from the same plant. But coffee plants are grown in various parts of the world, and you can notice distinct differences depending on what region they come from, what altitude they're grown at, and the local humidity. I'm still pretty new to this, so my tastes aren't very refined, and I don't know any of the terms used to describe differences in flavor, but I can, for instance, notice the difference in coffee from India and coffee from Ethiopia. There's also difference in how the beans are roasted. If I remember correctly, light roasting gives a sour and oily coffee, while dark roasting makes it more full and bitter and gives a hint of cocoa. Then there's the brewing method, which also has a pretty big impact on both the flavor and texture of the coffee you get. There's a huge difference between espresso and french press coffee, and I heard that Turkish brewing is really unique too.

Despite all that, it probably can't compete with tea in variety offered. But the complexity of flavor makes every cup an exciting experience, even if it's a blend you're already familiar with.

The common Darjeeling teas are what you'd expect out of a black tea that isn't quite as black as some other black teas. It's similar to darker oolongs in my experience, but with less qi. Astringent, medium-bodied, fairly light in color and taste.. I prefer the more oxidized black teas myself. I've yet to try a Darjeeling that was very special.

Today I gaiwan brewed some sencha after dinner. It lasted me about 5 infusions before I gave up on it. I think sencha is much better suited to pot brewing, but it was an experiment. The Japanese probably traditionally make it in a "kyusu" for a reason. You guys seem to drink a lot of green tea, which I normally don't, and considering this is /jp/, I suppose it's appropriate I had sencha. I rarely drink it so it's quite the coincidence. The tea I had before today was a bai mudan, pai mutan, pai mudan... whatever you want to call it since Chinese romanization is some broken mess of Pinyin, wade-giles, and whatever people feel works phonetically. A white tea, as I don't usually drink white tea and decided I wanted to get some more samples to learn more about them. It was pleasant. Very fragrant and had a soothing flowery taste. Bitterness largely depends on the roast if it's brewed right. American stuff tends to be very dark roasted and therefore very bitter, very roasty-tasting, and with a lot of the original coffee taste lost. Start with a black tea like Darjeeling. In India this is often used for chai which is traditionally made in milk and I've seen some blends with chocolate as well. There's also very interesting milk teas in Hong Kong. Some are outright terrible and some are great. Depends on the tea, brewing style, and your personal preferences. Personally there are a lot of teas I've had that are fine brewing western style for a long time, but certain teas I'll only make a cup or so of at a time because they turn rather nasty if they brew past a certain point. Something you can do, if you like to make large amounts of tea at a time, is decant the tea if it's sensitive to sitting around, or if you've found a sweet spot in the brewing times for the particular tea. Today I decided to finish up an experiment I started yesterday. I have a mystery, good quality oolong that I picked up from a local retailer that I haven't seen in about a year now since I rarely go out. She didn't tell me a lot about the stuff and brewed tea in a questionable manner when I visited her but she's a vendor living in the states so she has to be like that as to not intimidate newcomers. She obviously knows a lot, but she owns a business, so... Anyway that's another story.

The oolong in question is rolled mostly full leaves, which is something I don't often encounter around here. I'm not yet experienced enough to say with certainty its origin. After I seemingly exhausted its infusions last night, I decided to air out the leftover leaves and try them again today. They were almost completely dry when I decided to try them today. To my surprise, but also fulfilling my hopes, the first couple infusions I had after this little experiment were very good. It was different from what you get from the initial infusions, but after undergoing this processing it was transformed and given a new life. It was very interesting. It was pleasantly sweet as usual, but in a different way, and it had a mustier aroma to it. It gave me that psychoactive effect in the front, upper quadrants of the head that I love to get when I drink tea. Some might say this is the effect tea has on your qi, and I wouldn't disagree.

It's ok now, but I first went about a decade ago and it was traumatising. I had to keep asking what the options were for everything and what cost extra (I had very limited money with me and didn't want to exceed that amount) and they got annoyed with me. Even now when I go, they greet me looking happy, but their expression falls when I start saying things so I feel bad like I'm inconveniencing them too much.

I've only been to Starbucks once and they didn't have the only thing I knew the identity of so I had to guess and ended up with something bad. Others have bought me things from there on occasion and they weren't good either. The simple items are very expensive and I could make those myself for much less, so none of it seems worthwhile at all.

Green Kukicha tastes so raw it makes me queasy. It's made from the stems of the plant. I don't know why I drink it because the flavor is almost nauseating but it's somehow addictive. I've had pounds of it.

Is that from Den's? If you're buying from there you might also look at the Sencha with Matcha they sell. Maybe I just make it wrong but that stuff tastes like sucking the water out of a bog, though as with the above I like it. It probably has something to do with how the matcha powder leaks out of the infuser so easily. It gives it a thick and soupy consistency and is probably oversaturated, but it tastes really strong and might be what you're looking for.

I really love greens, I almost can't explain it. I chew on Kale stems and make a big ball out of it and use it like gum. Also I did get it from Dens, thanks for the suggestions. I can't get loose tea anywhere here. My only options is the single Indian grocery and that's just spiced tea and Jasmine. Maybe I'll see if someone opened up an Asian one. I'm waiting until March for them to introduce the Sakura Sencha since I liked the last Seasonal tea so much.

I think I messed up my first batch in this new teapot since it came out way more mild, I have a scale I use while making it but I forgot to zero between the tea and water and just guessed. It's sort of nice to make it more mild though. Hopefully I'll find a place to buy locally as this area slowly becomes more civilized.

Please explain what you learned and what different experiences you had before this brew, during, and after. I'm curious about your progress and experiences with tea.

Today I had a mystery puerh. Again, the vendor didn't tell me much about it since they just want to make sales and keep it simple. I don't really mind since I just like to try lots of teas, but it is frustrating not to have a way to compare teas properly. In the future when I try many other teas I might be able to have a good guess about its origin and processing. It seemed to contain chenpi, which is alright when I'm in the mood for it I guess, but I usually prefer my tea without any additives. Still very pleasant overall, as most teas are. After some infusions it was a lot lighter, but had a sweetness that wasn't initially present. For the first few infusions it was a little bitter, but coated the mouth which was nice. If drank in a quick flow like taking a shot, it had a milkiness that I hadn't yet experienced in many teas and huigan, or throat sweetness, that connoisseurs often look for in teas.

I personally only like milk with Indian teas, especially the spiced ones. I have a chocolate chai that is very good with a little bit of milk. It gives it a very nice body and doesn't take away from the tea at all. If anything it makes it feel more whole. I almost never drink tea with milk, but with this particular tea I pretty much always have 20% or lower of its composition being milk; It's very good. I would suggest these kinds of teas or any strong, barky-tasting, "popular-with-the-English" Indian or otherwise kind of black tea, such as English breakfast blends or any of its component teas. Lapsang Souchong, to me, would be ruined with the addition milk but there's nothing wrong with it if that's how you like it.
