All of the following books are good places to start:
Summa of the Summa by Peter Kreeft
Selected Writings of Thomas Aquinas (Penguin Classics)
Aquinas (A Beginner's Guide) by Ed Feser

Feser. He goes over Aquinas' connection to Aristotle and each of the main points of the Summa Theologica in a more concise and introductory manner. Plus, he's a bona fide Neo-Thomist so he has a good deal of knowledge on the subject compared to Kreeft, who is also good but takes a lot longer to get to his main point a lot of time.

Kierkegaard was a lot less critical of the Catholic Church than he was of his own Lutheran one. A lot of people think he was showing signs of converting to Catholicism before he died

I've heard Aristotle East and West is good. Just read the Fount of Knowledge and you'll realize that Roman Catholicism is weird for how heavily it focuses on Augustine and Aquinas
